Abstract
Silk has a long and established history in textile production and continues to be an important and valuable material. More recently, silk-derived biomaterials also represent an increasingly important field of material science. Both from an historical context, as well as from a material performance context, the degradation and preservation of silk and its products is of critical concern
This chapter outlines current knowledge as to the degradative modification of silk proteins at the molecular level and how these affect holistic performance and properties. It also details state-of-the-art proteomic approaches which can be utilised to profile and track this degradation, as well as evaluate protein protection strategies.
