Abstract
This chapter discusses the development of a series of predominantly mesoporous carbons (Starbon®) produced from waste polysaccharides. Their porosity is derived from the structural features of the polysaccharide, avoiding the need for templating. Their surface chemistry is described along with functionalisation routes and applications in catalysis and adsorbency.
